Sobre Cláudio Milhazes:

I enjoy Japanese cuisine and Japanese culture. I have some experience with the flavours and the ingredients, although I am not a master. What I like the most about Japanese cooking is, mainly, its precision, the beautiful simplicity, the value that is given to the freshnes of the ingredients, the respect for the ingredients, and the beautiful light presentation of the dishes.

I am willing to learn a lot more about Japanese cuisine and culture, and also about vegetarian, vegan, plant based food, for example, Shojin Ryori cuisine.

I have stoped my cooking career for 3 years because I wanted to do a bachelor's degree in philosophy, I think it was an important phase in my life to improve myself and be open to different perspectives.

Now that I have finished my bachelor's, I want to continue my career in doing something that I enjoy.

I am an experience cook, organised, very aware of cleanliness, I learn quickly and I am aware of the importance of good team play in order to have a smooth service and serve the clients well.

The service was "tapas style" for sharing, small dishes with fresh and unique flavours. Great attention to detail in cutting, flavour, texture and presentation.
Great attention to hygiene.
Sections rotation: Robata Grill, frier, Bao's section, cold section.
